Everyone knows that vegetables are part of a healthy diet. Many vegetables, such as broccoli, peppers, and carrots, taste best when eaten raw.
However, some vegetables can cause health problems if cooked incorrectly.

Potatoes are probably the best known vegetable that is dangerous to eat raw. They contain solanine, which can cause death if consumed in fairly large quantities. This means that you have to eat a lot of raw potatoes to approach dangerous levels of solanine. However, eating uncooked potatoes can make you feel unwell, so it is best to heat them thoroughly beforehand.
Red kidney beans
Beans contain a chemical called phytohaemagglutinin, which can cause severe nausea and vomiting, even in small amounts. Fortunately, boiling the beans eliminates the toxin, but be sure to discard the water afterwards to avoid eating something you shouldn’t.
The high cyanide content in cassava can cause severe nausea and low iodine levels, which in extreme cases can lead to paralysis and death. Cassava may also contain pesticides and trace elements, as it readily absorbs contaminants as it grows.
